Can eating crispy food cause cancer in women?

Unfortunately, a new study has found that the general public's love of crispy, fried, starchy foods may be hazardous to their health, especially to women.

Acrylamides: Are you eating a carcinogenic chemical?

Acrylamide is a chemical compound used to synthesize polyacrylamdies used in papermaking, the manufacturing of dyes and permanent press fabrics and wastewater treatment. When acrylamide decomposes by heat it produces carbon dioxide, oxides of nitrogen and carbon monoxide. It produces ammonia when non-thermally decomposing.

Acrylamides are found in large quantities in starchy foods like bread, cookies and potatoes, especially potato chips and french fries. Mainly, they are found in fried, grilled and baked starchy foods. Coffee contains these chemicals. Smoking produces them in your body. They are even created during microwaving.

Many health issues have been linked to acrylamides including various cancers, though only recently has a study shown that eating high amounts of acrylamides may cause womb and ovarian cancer in women. This new study supports the ongoing research that acrylamides are a human carcinogen.

The Study: Women and Acrylamides

The study was conducted by the University of Maastricht in The Netherlands. The researchers questioned 120,000 people on their eating habits and followed them for eleven years. Out of these volunteers, 62,000 were women and during the study over 300 developed endometrial cancer, while 300 more developed ovarian cancer.

The study also found that women who ate 40 micrograms of acrylamide a day were at a much higher risk for these cancers. The study was published in Cancer Epidemiology, Biomarkers and Prevention.

While research conducted in 2005 had already shown acrylamides to be a health danger, this is the first study to link dietary acrylamide intake directly to womb and ovarian cancers.

How do I reduce my intake of acrylamides?

Since the study targeted a certain number of micrograms as being ‘high risk’, you may wonder what 40 micrograms of acrylamide looks like. Unfortunately, 40 micrograms can be found in a single packet of fast food french fries. It can be found in a single-sized bag of potato chips. You can also find acrylamide in a half pack of canned biscuits. Colored and burnt food is more likely to contain acrylamides, so if you burn the burn the bottom of those cookies or biscuits you are baking, you might want to forgo eating them.

Experts say that it is nearly impossible to eliminate acrylamides from the diet altogether and suggest that people avoid overcooking starchy, high carbohydrate foods. They also suggest eating a balanced diet, rich in raw fruit and vegetables.

The conclusion

Cancer research experts are asking that women not be alarmed. Even though the study was large-scale over a long period of time, they are suggesting that it is difficult to separate one component of a complex diet to make finite conclusions. Experts are also suggesting that other factors could be to blame.
